Ingredients
- 1 whole chicken breast
- 2 portions Camel Brand plain white cheese
- 50 g softened butter
- 2 garlic cloves, minced
- Fresh basil, finely chopped
- 1 tsp paprika
- 100 g shredded mozzarella
- 1 packet potato mash powder
- Fresh parsley, chopped (for garnish)
- Olive oil
- Salt and pepper
Method
- Cut the chicken breast in half, then slice each half again through the middle to make 4 thin portions.
- Place each piece between cling film or baking paper and flatten with a kitchen mallet.
- Season both sides with paprika, salt, and pepper.
- Mix the softened butter with minced garlic and chopped basil.
- Spread the garlic-basil butter onto each chicken piece.
- Cut the Camel Brand cheese into 4 small rectangles, place one inside each chicken piece, roll up tightly, and secure with toothpicks.
- Lightly oil a baking tray, arrange the chicken rolls, and brush with the remaining butter.
- Cover with foil and bake in a preheated oven at 220°C for 25 minutes.
- Remove the foil, sprinkle mozzarella on top, and broil for 5 minutes until golden and bubbly.
- Serve hot with baked or mashed potato, garnished with fresh parsley.
