Cheesy chicken rolls (Danish cheese)

Ingredients

  • 1 whole chicken breast
  • 2 portions Camel Brand plain white cheese
  • 50 g softened butter
  • 2 garlic cloves, minced
  • Fresh basil, finely chopped
  • 1 tsp paprika
  • 100 g shredded mozzarella
  • 1 packet potato mash powder
  • Fresh parsley, chopped (for garnish)
  • Olive oil
  • Salt and pepper

Method

  1. Cut the chicken breast in half, then slice each half again through the middle to make 4 thin portions.
  2. Place each piece between cling film or baking paper and flatten with a kitchen mallet.
  3. Season both sides with paprika, salt, and pepper.
  4. Mix the softened butter with minced garlic and chopped basil.
  5. Spread the garlic-basil butter onto each chicken piece.
  6. Cut the Camel Brand cheese into 4 small rectangles, place one inside each chicken piece, roll up tightly, and secure with toothpicks.
  7. Lightly oil a baking tray, arrange the chicken rolls, and brush with the remaining butter.
  8. Cover with foil and bake in a preheated oven at 220°C for 25 minutes.
  9. Remove the foil, sprinkle mozzarella on top, and broil for 5 minutes until golden and bubbly.
  10. Serve hot with baked or mashed potato, garnished with fresh parsley.
